There is a meticulously kept diary for every year that the Kay Family has been at Amer. They give not only detailed vintage records and weather information, but also a host of day today insights into the tremendous physical effort people put into working and living in those premature days. Within a week of arriving Bert and Fred measured their land a few months later started to organism vine cuttings for planting. Crushed beginning cask of grapes. Most of the wines made at this time were dry red blends destined to be sold in bulk and for export. They also made sweet fortified reds and a trivial quantity of parched whites. As well as building the business the Hays were also building their family. Fred never married but he did act as superior man for Herbert when he married in 1913. As healthy as busy solid to make a victory of Amer the Kay family also helped in many local community projects and were energetic in many organizations. They were also both very energetic in projects such as the building of the McLaren Vale Institute and the Willunga railway. Other than a stint in the army when Fred and Bert returned to the business, this event marked the handing over to the following generation of the family. This change allowed winemakers to express a smooth of individuality in their finished wine and also encouraged direct sales to the public. All the Kay family were inevitably involved in this process as well as the normal winery and vineyard jobs. Hays no longer sells bulk wines and instead sells all its output, including fortified wines, lower the Kay Brothers label. It has a vision to save the values of it forebears and to continue to produce sustainable wines of exemplary quality as it has done for 3 generations. It was John McLaren who beginning surveyed the area south of Adelaide in 1838 reaches the area now obvious as Mclaren Vale the succeeding year. The land he was sectioning had been filled for tens of thousands of years before by the Kaurna people. Peaceful people, the Kaurna had accessible trading and cultural ties with other groups of Indigenous Australians in the southern parts of Aboriginal Australia. European colonists foresaw great economic potential in the land they came across. The crop of choice during these early years was wheat and as yields continued to increase, so an increasing number of farmers were attracted to the area. While there is sufficient of evidence to suggest that the beginning European settlers to the area appreciated the instinctive beauty, they nonetheless imported ideas, customs and artifacts that were foreign to this portion of the world. Fences were erected and trees were removed to make way for grazing purposes as well as mining projects. The process was essentially the amalgamation of two little villages, Gloucester and Bellevue, which had both sprung up from mere necessity as people moved to the surrounding areas and there became a need for goods and services. By 1840 grape vines had been planted and began to dominate the area as word spread of the quality of conditions that were donate across the region for them.
